July 2021 Mold of the Month: Honeybee

Our Mold of the Month for July is the Honeybee. Little sugar was available in Europe until the 14th century. Thankfully, German monks raised bees, produced honey, and made sweetened cookies such as lebkuchen. By the 1600's with sugar more readily available, their baking expanded into springerle.
